Judging by how it felt, I'd have thought the handle was hollow.  You're 
right though - the balance is beautiful.

Very nice knives though.  I like my Henkels knives a lot.  Nobody uses 
them but me (those who know me are afraid of them).  I think they might 
be scared by how sharp they are (I keep them like razors), in spite of 
the fact that a very sharp knife is safer than a dull one.

I have a very cool paring knife from Boker that has a ceramic blade.  
The thing is super sharp - and I could cut bamboo with it  without 
dulling the blade.  It's damn near useless on anything that requires any 
kind of sawing action though - the edge is perfectly smooth.  On fruit 
(not tomatoes though) it's amazing.

Ever seen sushi knives?  They're so cool.
