Y'all is plural for "you".

Ex:  How are you doing? (singular)
	How y'all doin'? (plural)

Generally I'd say it's a replacement for that yankified "you guys" phrase..
:)

There is the exception that can be used if you're very angry or very drunk,
though: "all y'all", derived from "all of you" in proper english.  For
example, if you've been tossed out of the bar, it's OK to pick yourself up
and yell back to the door "Fine! To hell with ALL Y'ALL!!!", providing there
is no bouncer present..
