The crown (the little turny thing next to the 3) probably screws in,
so unscrew it. Normally, you pull the crown out one step to adjust
the date, two to adjust the time. When you're done, screw it back in.

disclaimer - I do not now nor have I ever owned a Rolex, but I have
played with more than just a couple swiss watches.
