I've combined your suggestion with my mom's and a recipe from the 
Internet. My favorite part of the meal when my mom does it are the 
onions and potatoes, but don't care for cooked carrots, so I went heavy 
on the onions and put two stalks of celery in there too.

I rarely cook beef; I had intended to get a ham shoulder for split pea 
soup, but they didn't have any where I went shopping so got that roast 
... my mom said, "Oh your apartment will smell so good!" after she 
explained how she did it.
