Yes, I'm a chef, and what I'm going to say may sound unbelievable:


I have never made a single dish with tuna in my life.


(Go on, laugh. I'll wait.)


I won't go into the reasons (availability being one of them), but I'm 
getting two fishes tomorrow as a sample from my fishmonger and am eager to 
try different things with it.


So...

a) What do you like to make with tuna?
b) What are other interesting ways in which you've seen it prepared?
