The problem is that "tricking email clients" falls into the category of 
"stuff that spammers do to force the user to see their images".  I hope 
that this kind of thing is not possible.

The best practise is to include alternative text for all your images. 
In this case, a simple "+" should suffice.

There are, however, people who may go so far as to suggest that you look 
at avoiding graphics whenever possible.  If you need a green "+", then 
why not use text?
